Chef Jean-Georges Vongerichten presents his world-renowned cuisine and style in Kyoto, which showcases exquisitely crafted dishes blending French, American, and Asian influences. Local ingredients are the driving force behind the seasonal, ever-changing menu.


The restaurant features an extensive wine cellar of over 3,000 bottles, alongside refined post-dining offerings including the hotel’s original Kyoto %Arabica special-blend coffee and a curated selection of premium Japanese teas.


Open for breakfast, lunch, and dinner, guests may enjoy seasonal tasting menus and à la carte dishes, uniquely crafted for Jean-Georges in Kyoto.


On the occasion of the opening, Chef Jean-Georges shares the following:


“I fell in love with Kyoto when I took my first trip, 20 years ago, and am so excited to be opening a restaurant there at the Shinmonzen in partnership with Paddy McKillen (a longtime friend and professional partner.)


When I travel, I am eager to learn and explore new flavors, ingredients, techniques and cultures. The produce in Kyoto is nothing like I’ve ever tasted, having visited some local farms, and they are renowned for the tofu which is the best I have ever had – the soil and excellent climate are the main contributors to the delicious ingredients. Kyoyasai is a term they use to describe their heirloom vegetables because of the increased minerals, fibers and vitamins. You can taste the difference immediately.


I look forward to working with local farmers, foragers, fishermen and meat purveyors as we welcome guests to our new restaurant opening this spring.”
